Gir Kesar Mango is named Kesar on basis of the saffron color of the fruit pulp. Gir Kesar Mango pulp is of saffron color and fibreless. The pulp weight is 69% of the fruit with no fiber and flat stone 18%. Skin is medium thick and weighs 13% of total fruit.

The juice is semi-solid, very sweet, tasty with good flavor. 

Gir Kesar Mango contains good Physico-chemical properties like size, shape, the color of the skin as well as pulp, test, flavor, TSS (18-22 oB), acidity (0.25-0.27%), Vitamin-A (42.0 IU), Vitamin-C (42-48 mg/100 g) and sugar (12-13%).

Characteristics including pulp color and flavor of Gir Kesar Mango are rare and unique and it is the result of a combination of plant genes, soil strata & chemistry, elevations, climatic parameters like temperature, humidity, sunshine & rainfall of the region. Gir Kesar Mango has cultivated in the area of Junagadh district particularly Gir territory including Gir Sanctuary and National Park and the areas nearby it. The fruits are matured during April-May. The keeping quality of the fruit is 15-20 days.
